I often remove all my strings when changing strings. Mostly for the reasons Jester mentioned. I like to do a good cleaning at the same time. And I never have had any problems. (Knocking on wood) Not to say that problems couldn't occur. Any time you remove then reapply tension to your neck there is a potential for an issue. Weather conditions can further present potential issues.
Whe I remove my strings, I try to do it a bit gradually and evenly across the neck. In other words I don't take off one string completely before starting on the next, rather, I lossen each string a little, then a little more, ect until they are all lossened and then I take them off. I do the same thing in reverse putting them back on. I then try to give it a day or so before I look at any potential need for TR or Bridge adjustments, just to be sure everything has had time to settle back in.
